THE RECIPE

Mini apple pies with pear & nutmeg

Small, handheld pies packed with filling—perfect for coffee breaks or picnics. Pear softens the apple’s tartness while nutmeg adds a subtle, warm spice.

Method

    Prepare the filling

    Dice the apples finely and toss with the sugar, starch and flavouring: 250 g diced firm pear in place of the same amount of apple, ¼ tsp nutmeg and 1 tsp lemon juice.

    Cut the bases

    Roll the dough thinly. Cut 12 large rounds and press them into a greased muffin tin.

    Fill

    Divide the filling and a small dot of butter among the cups. Leave a few millimetres below the rim.

    Add the tops

    Cut strips or smaller lids from the remaining dough. Attach with water and brush with egg.

    Bake

    Bake until golden. Let the pies stand in the tin for 10 minutes before lifting them out.
