Mini apple pies with salted caramel
Small, handheld pies packed with filling—perfect for coffee breaks or picnics. Amber caramel and flaky salt create a richer, more luxurious apple pie.
Method
- 1Prepare the filling
Dice the apples finely and toss with the sugar, starch and flavouring: 75 g caramel sauce and ½ tsp flaky sea salt; drizzle the caramel between the apple layers.
- 2Cut the bases
Roll the dough thinly. Cut 12 large rounds and press them into a greased muffin tin.
- 3Fill
Divide the filling and a small dot of butter among the cups. Leave a few millimetres below the rim.
- 4Add the tops
Cut strips or smaller lids from the remaining dough. Attach with water and brush with egg.
- 5Bake
Bake until golden. Let the pies stand in the tin for 10 minutes before lifting them out.
