THE RECIPE

Rustic apple galette with cranberry & orange

A free-form French tart with crisp folded edges and plenty of visible apple. Tart cranberries and orange zest make the pie colourful and refreshingly autumnal.

Method

    Mix the dough

    Rub the flour, butter, sugar and salt together. Add the water, shape into a flat disc and chill for 30 minutes.

    Slice thinly

    Thinly slice the apples and toss with the sugar, starch and flavouring: 100 g cranberries, finely grated orange zest and 1 tbsp orange juice.

    Shape

    Roll the dough into a roughly 35 cm circle on baking paper. Arrange the apples in the centre, leaving a 5 cm border.

    Fold the edge

    Fold the dough over the filling in soft pleats. Brush with egg and sprinkle with coarse sugar.

    Bake

    Bake until the edge is a deep golden brown and the apples are tender. Cool for 20 minutes.
