Rustic apple galette with pear & nutmeg
A free-form French tart with crisp folded edges and plenty of visible apple. Pear softens the apple’s tartness while nutmeg adds a subtle, warm spice.
Method
- 1Mix the dough
Rub the flour, butter, sugar and salt together. Add the water, shape into a flat disc and chill for 30 minutes.
- 2Slice thinly
Thinly slice the apples and toss with the sugar, starch and flavouring: 250 g diced firm pear in place of the same amount of apple, ¼ tsp nutmeg and 1 tsp lemon juice.
- 3Shape
Roll the dough into a roughly 35 cm circle on baking paper. Arrange the apples in the centre, leaving a 5 cm border.
- 4Fold the edge
Fold the dough over the filling in soft pleats. Brush with egg and sprinkle with coarse sugar.
- 5Bake
Bake until the edge is a deep golden brown and the apples are tender. Cool for 20 minutes.
