THE RECIPE

Vegan apple pie with rosemary & maple

A fully plant-based double-crust pie with flaky pastry and juicy apple filling. A little rosemary and maple syrup create an unexpectedly elegant herbal sweetness.

Method

    Make the dough

    Rub the flour, vegan butter, sugar and salt together. Add enough water for the dough to come together. Chill for 30 minutes.

    Mix the filling

    Slice the apples and toss with the sugar, starch and flavouring: 1 tsp finely chopped rosemary, 2 tbsp maple syrup and 1 tsp lemon juice.

    Assemble

    Line a pie dish with two-thirds of the dough, add the filling and dot with vegan butter.

    Cover

    Make a lattice or full lid with the remaining dough. Brush with oat milk and sprinkle with sugar.

    Bake

    Bake on a low oven rack until golden and bubbling. Rest for 40 minutes.
