THE RECIPE
Apple crumble pie with pear & nutmeg
Tender apples under a crisp, buttery oat crumble. Pear softens the apple’s tartness while nutmeg adds a subtle, warm spice.
Method
- 1Prepare
Butter a 24–26 cm pie dish. Peel, core and slice the apples.
- 2Season
Toss the apples with the sugar, starch and flavouring: 250 g diced firm pear in place of the same amount of apple, ¼ tsp nutmeg and 1 tsp lemon juice. Place them in the dish.
- 3Make the crumble
Rub the butter, flour, oats, sugar and salt into uneven crumbs. Do not overwork the mixture.
- 4Cover
Scatter the crumble loosely over the apples without pressing it down. Chill for 10 minutes if time allows.
- 5Bake
Bake in the centre of the oven until deeply golden and bubbling. Rest for 15–20 minutes.
