THE RECIPE

Apple crumble pie with salted caramel

Tender apples under a crisp, buttery oat crumble. Amber caramel and flaky salt create a richer, more luxurious apple pie.

Method

    Prepare

    Butter a 24–26 cm pie dish. Peel, core and slice the apples.

    Season

    Toss the apples with the sugar, starch and flavouring: 75 g caramel sauce and ½ tsp flaky sea salt; drizzle the caramel between the apple layers. Place them in the dish.

    Make the crumble

    Rub the butter, flour, oats, sugar and salt into uneven crumbs. Do not overwork the mixture.

    Cover

    Scatter the crumble loosely over the apples without pressing it down. Chill for 10 minutes if time allows.

    Bake

    Bake in the centre of the oven until deeply golden and bubbling. Rest for 15–20 minutes.
