THE RECIPE

Caramel oat apple pie with pear & nutmeg

A Swedish coffee-table favourite with a glossy, caramelised oat topping. Pear softens the apple’s tartness while nutmeg adds a subtle, warm spice.

Method

    Fill the dish

    Slice the apples and toss with the sugar, starch and flavouring: 250 g diced firm pear in place of the same amount of apple, ¼ tsp nutmeg and 1 tsp lemon juice. Place in a buttered dish.

    Melt

    Melt the butter. Stir in the oats, flour, sugar, cream, syrup and salt to make a glossy batter.

    Cover

    Spoon the batter over the apples and gently spread it all the way to the edge.

    Bake

    Bake in the centre of the oven until the topping is dark golden and bubbling.

    Let it set

    Rest for at least 25 minutes so the topping turns crisp and the filling thickens.
